What an eventful few months it’s been… I don’t quite know how to start. I feel like I begin every blog post this way but it really is true. In the past two weeks, I have completed eight interviews for my honors project, been in nine different states, and have recently started filling two suitcases. No matter how much I prepare to go back to school, it always sneaks up on me and I find myself panicked. Last night, I was awake at three in the morning worrying about doing my grocery shopping… I cannot think of anything more pathetic. Well maybe a few things that are more pathetic… after all, I haven’t even gotten to the actual packing yet!
I won’t spend too much time on it, but I will say that today I definitely enjoyed dreaming of making this in my new kitchen much more than folding all of my clothing! (Summer Squash Lattice Ricotta Tart, A Cosy Kitchen http://acozykitchen.com/summer-squash-ricotta-tart/) I’ve recently come to understand that most of my favorite foods, Japanese aside, are merely vehicles for cheese, and this awesome-looking tart is no exception. I digress.
Perhaps it is the finality of packing that always intimidates me. Either that or I just really hate laundry as much as I say I do. Either way, it seems like this big hurdle that I cannot overcome until finally I am on a plane and I have no idea how it happened but everything managed to make it up into the air a few hundred feet with me. It’s always something I find incredible. Perhaps this year it is compounded with the fact that this is probably the last time I will be making such a move to Minnesota. A sobering thought, full of anxiety about what comes next, but also a relief – I’ve still got a whole year left!
